This coffee went through an additional fermentation process. After the cherries were picked and sorted to remove defects, the cherries were left to ferment in a relatively low oxygen environment for about three days, before being dried on raised beds. The producer has done multiple experiments and came to the conclusion that the additional step in fermentation does add positive flavours in the coffee, which we agreed upon tasting the coffees. Expect intense tropical fruit flavours and sweetness.
We taste jackfruit, cinnamon and has a candy like sweetness.
